Agave, commonly known as “maguey” is an important part of the Mexican tradition and economy, mainly used for production alcoholic beverages, such tequila. Industrial exploitation generates by-products, including leaves, bagasse, fibers, that can be re-valorized. Agave composed cellulose, hemicellulose, lignin, fructans, pectin, well simple carbohydrates. Regarding functional properties, fructans content makes agave a potential source prebiotics with capability to lower blood glucose enhance lipid homeostasis when it incorporated prebiotic ingredient in cookies granola bars. also has phytochemicals, saponins flavonoids, conferring anti-inflammatory, antioxidant, antimicrobial, anticancer among other benefits. fibers are polymer-based composite reinforcement elaboration, due their thermo-mechanical properties. bagasse considered promising biofuel feedstock, attributed its high-water efficiency biomass productivity, high carbohydrate content. The optimization physical chemical pretreatments, enzymatic saccharification fermentation key production. Emerging technologies, ultrasound, provide alternative current pretreatment processes. In conclusion, agaves rich by-products wide range industrial applications, therefore novel processing methods being explored sustainable re-valorization these residues.
